SPAGHETTI WITH CHICKEN & MUSHROOM SAUCE



SPAGHETTI WITH CHICKEN & MUSHROOM SAUCE


INGREDIENTS

1 onion finely chopped
3-4 tbsp olive oil
4 cloves of garlic
1/2 carrot finely chopped
300 gms mushroom sliced
250 gms chicken mince
350 gms chopped tomatoes
50 gms tomato puree
400 gms spaghetti ( boiled and kept )
50 gms basil roughly chopped
100 gms parmesan cheese ( if available )


METHOD
1. In a pan heat oil, saute the onions, garlic for about 3 mins, add in the carrots and cook till soft, add in the sliced mushrooms and a pinch of salt and cook till water evaporates.
2. Add in the chicken mince, brown it a little, then add in the chopped tomatoes and the tomato puree and cook till the tomatoes are soft.
3. After boiling the spaghetti, keep some of the pasta water to thicken the sauce.
4. Once the tomatoes are cooked, add in some of the pasta water and get the sauce to desired consistency.
5. Season the sauce with salt and pepper. Some paprika can be added to make it spicy
6. Add in the spaghetti and toss along with the sauce to make sure the sauce is evenly distributed.
7. Just before serving sprinkle grated parmesan cheese and the roughly chopped basil and stir once.
8. Serve hot with a drizzle of extra virgin olive oil.
