Aloo Tuk Wali Chaat

Being a sindhi myself, one of the dishes that all we sindhis love is the Aloo Tuk. Its basically deep fried potato slices which is then coasted in some spices(masalas). Traditionally its had with Sindhi Curry with Rice. One staple meal all sindhis make on a sunday afternoon.

Like I said above, I love aloo tuk, so for the love of that, I though why not try something different with it and after a little thinking and sleepless nights (Just kidding), I came up with Chaat and Aloo Tuk - Aloo Tuk Chaat.

Ingredients - 
Potatoes Sliced (Medium thick) - 2
Green Chutney - 20-25 gms
Tamarind Chutney - 20-25 gms
Red Chili Powder - 5-8 gms
Dried Mango Powder - 5-8 gms
Coriander Powder - 5-8 gms
Salt - To Taste
Green Chilies Chopped - 2-3 pcs
Onions Chopped - 1/2 Onion
Tomato Chopped - 1 Tomato
Lemon Juice - 1 lemon
Coriander Chopped - To garnish.
Oil - To Deep Fry
Yogurt - 50-60 gms (forgot to put in picture. )

Its a bit time consuming recipe as the potatoes need to fry slowly and nicely so be patient. The say 'Sabar ka phal meetha hota hai. :P'.

So we start.

1. In a pan take oil and bring it up to the temperature. 
(If you are hot, dont be near the oil, it might just become very hot and might burn the potatoes :P. )


2. Put in the slices of the potatoes one by one into the hot oil. 
(If you are a little bored, keep counting them while putting it inside, it helps :P.)

3. They will take about 8-10 mins so that they are perfectly cooked, and have got the beautiful golden color.

4. Once they are done, remove them on the kitchen towel so that all the extra oil is soaked by the paper, you may want to avoid the extra calories.


5. All the oil is soaked, transfer them to a steel bowl or any bowl which you have.

For the next step we will have to be quick because if the potatoes become cold, the masalas that we are going to put will not stick on to them.


6. To the garam garam aloo tuk we will add in the following masalas, red chili powder, coriander powder, dried mango powder and a little salt and toss the potatoes well making sure everything is quoted evenly. (I like dried mango powder, so I added a little more than the quantity mentioned above.)

7. Now below is the final step before you can eat, its assembly time
For the assembly, we need to add the remaining products in the order below.
a. Potatoes in the plate.
b. Chopped onions
c. Chopped tomatoes and green chilies.
d. Whisked yogurt (I had seasoned it with a little salt).

e. Tamarind chutney and green chutney.
f. Final garnish with coriander. (it makes the whole dish lively :P )

That's it, now you can eat it. you can take a picture of the end product and share it with me but its a bit difficult to wait as the dish is quite tempting.

Turmeric Rice with Chole Masala Pan Seared Chicken and Chole Masala Sauce - Tata Sampann

The theme for this recipe is Food Moments and you will see some parts of the recipe revolve around my family.  

They say happiness comes in small packets, its true but so does food as well. Here im referring to small packets of spices which take the food to another level and giving the person eating happiness. Before I begin with the whole recipe and what will be there in the post below, ill give you a little idea whats in store here and how I came up with this idea.
The recipe consists of three elements, the main protein, the starch and the sauce to accompany it.
1. The Pepper and Turmeric Rice made using the Tata Sampann Turmeric.
2. The Chole Masala Sauce made using the Tata Sampann Chole Masala.
3. The Pan Seared Chicken made using the Tata Sampann Chole Masala and Tata Sampann Red Chili Powder.

Below you can see some of the masala Tata Sampann has to offer.

The various components that are there in the recipe, one of them I had learnt from from my mom - the chole masala sauce. She makes great chola in the onion and tomato gravy and taking that as the base and using the chole masala by Tata Sampann, I made this. Recipe is there below, dont worry.
Another component - the pepper and turmeric rice, my grandmom used to make a similar version of this using turmeric and lots of coriander and green chilies. I took the same base and just added the tata sampann turmeric and peppers, dont worry, the recipe for this also is there at the bottom as you scroll down.

 Also before I begin, there are some things that you should know about the Tata Sampann Masalas.

They have various spices ranging from Turmeric, Red Chili, Garam Masala, Meat Masala and I can go on and on.

Not many know this but I wil tell you (its a inside secret :P), there are two types of masala, SPENT and UN-SPENT. Now the difference is that, many a times, the natural spice oils are extracted from the spices and these spices are known as SPENT Spices. Now, what makes Tata Sampann Masalas different from others is that, they are made from only UN-SPENT. This mean that the masalas are full of natural spice oils.

Did you know that the Tata Sampann Spices are sourced from the best farm directly and hence the spices retain the natural spice oils for a blissful experience. 

So now its time for the recipe which like I said consists of three parts. Thode lambi recipe hai but its worth the time taken. 
We will start with element 1 - The Pepper and Turmeric Rice. 

Below are the ingredients that are needed for the same. 

Tata Sampann Turmeric - 1 tsp
Rice - 150 gms cooked rice
Oil - 2 tbsp
Green Chili - 1 tsp
Green Pepper - about 15-20 gms
Yellow Pepper - about 15-20 gms
Red Pepper - about 15-20 gms
Salt - To taste.

Step 1. Gather all the ingredients, present is nicely and take a photo for the memory :P, just kidding. Take oil in the pan and let it heat up. Once its hot move on to the next step.(I forgot to keep the chilies in this image, i hope you will forgive me for that :P)

Step 2. Oil is hot, add in the lovely peppers, the colorful pepper and also the chilies

Step 3. Sautee them and while they are doing their work, play some music. Trust me its really fun listening to music while cooking.

Step 4. Add in the Tata Sampann Turmeric. Its good for health. 

Step 5. Cook the turmeric and the peppers properly. Did you know that turmeric is considered as a very good medicine for health. 
''Turmeric has compounds that are called curcuminoids, the most important of which is curcumin. Curcumin is the main active ingredient in turmeric. It has powerful anti-inflammatory effects and is a very strong antioxidant.'' - source - Google. 

Step 6. Add in the rice and mix it well ensuring that the turmeric and the peppers are evenly distributed among the chawal (rice).

Step 7. This is a very important step coz here the main flavor comes out. If you miss out on this step, the dish will not have much flavor. Salt, this ingredient might seem like a small thing but its a very important one. Season the dish well and check the flavors. You will get the earthy flavor of the turmeric and the crunch from the peppers.

Once the rice is ready, keep it aside and move onto the next element of the dish, the sauce.

The next element -  The sauce is as important as the other elements as this brings the whole dish together. In this component we will use other variations of the Tata Sampann Spices.

Element 2 - The Chole Masala Sauce

Tata Sampann Turmeric - 1 tsp
Tata Sampann Red Chili Powder - 1 tsp
Tata Sampann Chole Masala - 1 tsp
Tomatoes sliced - 1 whole
Onions sliced - 1 whole
Oil - 2 tbsp
Salt - To Taste
Green Chilis chopped - 1 or 2 whole
Ginger-Garlic Paste - 1 tbsp
Heavy Cream - 100 ml.

Step 1. Heat oil in the sauce pan. This heating of oil is a common step in all of my recipes if you have noticed. 

Step 2. Once the oil is hot enough, add in the sliced onions and sweat it down and brown them. Mind you this process will take a little time.

Step 3. As you can see, the onions have become a bit pink and caramelized as well. It will take a min or so more.

Step 4. We have reached the right color and now its time to add in the ginger-garlic paste and get the cooking going. You cook the onion and the ginger garlic paste mixture until its soft and looks very similar to a paste. 

Step 5. Now we add in the tomatoes and let the mixture cook again before we add in the other ingredients. Let the tomatoes become soft and a bit mushy, this should take about 2 -3 mins.

Step 6. Add in the green chilies, tata sampann chole masala, tata sampann turmeric and tata sampann red chili powder and mix it well. You might have to add in a little water so that the masalas dont get burnt. 

Step 7. Let the whole mixture cook and let the flavors get infused properly. 

 Step 8. Add in some more water if needed and let the mixture cook, bubble away and reduce. This should take some time but trust me you will get the flavors and you will love it. Not because its my moms recipe, but its also the Tata Sampann Spices, they elevate the flavors as they are directly taken from the farms.

Step 9. Next what you will have to do is puree the mixture to fine and smooth in order to get the restaurant style texture, but I have left in a bit of onions and tomatoes just to get the texture rustic. 

Step 10. Transfer it to the pan and add in the cream, I have added half of what I have mentioned above as you all know im dieting :P.

Step 11. This is the last step of this element. Mix the cream well, season the sauce and give it a boil and tada, your sauce is ready. PHEW. 
Keep it aside as we move onto the next and the final element of the dish.

Element No 3. Pan Seared Chole Masala Chicken

Chicken Breast - 1 whole sliced
Tata Sampann Chole Masala - 1 tsp
Oil - 2 - 3 tbsp
Salt - To Taste
Ginger-Garlic Paste - 1 tbsp
Tata Sampann Red Chili Powder - 1 tbsp (Forgot to put it in the image here.)

Step 1. Here we need to keep everything ready so that we dont waste time looking around. Lets get started with this final element and finish it and enjoy the dish. Now as im writing, im also hungry :P.


Step 2. We will marinate the chicken breast so that it gets that earthy flavor and the taste and the color and the beauty. For the marination we will put in oil, tata sampann red chili powder, ginger garlic paste, salt and tata sampann chole masala.

Step 3. Mix the mixture well, massage the chicken breast gently and with soft hands making sure that the chicken is properly covered.

Step 4. Heat up a pan and put in a spoon of oil. Make sure its quite hot as soon as you put in the chicken, it will seal it on the bottom and the juices will get locked in making it tender and juicy.
So now the oil is hot, take the chicken breast and put it on the pan. (make sure the pan is hot, garam like me :P)

Step 5. One side is done, flip over and let the other side get the color and let it cook properly. I had cut the chicken breast in half so it took me about 2 mins on each side, not exact time, but close to it.

Gather all the elements, its time to plate up and present the dish and make it look beautiful. I'm just going to do it in a simple way, but you can let your imagination go wild and plate it up the way you want. (Do share with me by tagging me on instagram or twitter in the plating.)
