No Churn, Quick Ice-Cream.

The thing that inspired me to develop this recipe was my younger brother. He is an ice-cream lover and loves different flavors of ice-cream.

Usually people think that ice-cream takes lots of time to make, it is also said that, one needs to churn it a couple of times to obtain a smooth texture.
This recipe is the opposite and to change peoples idea about that long process of making ice-creams.

Ingredients -

600 gms - Double Cream/Heavy Cream
325 ml -350 ml - Condensed Milk
2 pcs - Vanilla Bean Pods
15 ml - Coffee Concentrate

Method - 
1. Take the Double Cream and Condensed Milk in a big bowl.
2. Using an electric egg beater, whip the mixture until light and fluffy.
3. Once the mixture has incorporated air, divide them into 2 portions.
4. In one bowl, add in the Coffee Concentrate.
5. Scrape the seeds from the vanilla bean and add it to the second bowl and mix well
6. Put the mixtures in air-tight containers and keep it in the freezer to chill.
7. Serve chilled.

Note - 
1. Flavors can be substituted with choice.
2. If vanilla bean is not available, it can be replaced using vanilla essence.
3. Add in some alcohol, it will not let the ice cream freeze completely and help maintain the texture, this being completely optional.

Assorted Canapes

A few days ago, I was having some guests over for dinner and its like a tradition in the house, that there should be a good variety of food, ranging from soups, salads, starters, main course and not to forget desserts. This time, I decided to make something different, a well known thing, Canapes but with different stuffings. 
I got home some vegetables some canape shells and removed the basic ingredients from the cupboard.

Ingredients - 
Canape Shells - 10-12 pcs

Mild Filling - 
Red Pepper - 1/2 pc
Yellow Pepper - 1/2 pc
Green Pepper - 1/2 pc
Onion  - 1/2 pc
Hung Curd - 100 gms
Honey - 1 tsp

Spicy Filling - 
Onion - 1/2 pc
Red Pepper - 1/2 pc
Yellow Pepper - 1/2 pc
Green Pepper - 1/2 pc
Green Zucchini  - 50 gms
Siracha Sauce - 2 tbsp
Tabasco - a few drops
Dried Oregano - 2 gms

Method - 
1. Fry the Canape Shells till golden brown and keep it on a kitchen towel to drain off the excess oil.
2. Cut the peppers, onion and zucchini in the small dices and keep them separate.
3. In a bowl, take the hung curd and honey and cream it will, then add in the peppers and the onions along with some salt and mix it well.
4. Once its ready, keep it in the fridge to let it extract the flavors.
5. In another bowl, take the remaining vegetables, add in the siracha sauce, tabasco and dried oregano and season it with salt and pepper.
6. Mix it well and keep in the fridge for some time.
7. While serving, take the canapes, fill the mixture and serve it at room temperature.

Note - 
1. The filling can be changed and with choice.
2. Store the fried canapes in airtight containers to avoid it from getting soggy.
